  • 6 slices bacon

  • 2 stalks green onions, thinly sliced
  • Salt and freshly ground black pepper to taste
  • Optional: dash of smoked paprika or squeeze of lemon juice

Instructions

  1. Wash and peel the russet potatoes, then cut into roughly 1-inch cubes.
  2. Place potatoes in a large pot and cover with cold salted water (about 1 teaspoon salt).
  3. Bring to a boil over medium-high heat and cook for 10-12 minutes until tender but not falling apart.
  4. Drain potatoes immediately and set aside to cool slightly.
  5. While potatoes cook, fry bacon strips in a skillet over medium heat until crisp (6-8 minutes).
  6. Transfer bacon to paper towel-lined plate to drain and cool, then chop into bite-sized pieces.
  7. In a large mixing bowl, combine mayonnaise and sour cream; stir until smooth.
  8. Season dressing with salt, pepper, and optional smoked paprika.
  9. Add warm potatoes to the dressing and gently fold to coat.
  10. Add chopped bacon, shredded cheddar, and sliced green onions; mix gently but thoroughly.
  11. Taste and adjust seasoning with extra salt or pepper if needed.
  12. If salad is too thick, add 1-2 tablespoons milk to loosen.
  13. Serve immediately warm or refrigerate for 30-60 minutes to chill and meld flavors.
