  • 1 tablespoon heavy cream or milk

Instructions

  1. Grate 1 1/2 cups zucchini finely and squeeze out excess moisture using a clean kitchen towel.
  2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a large bowl, combine granulated sugar and brown sugar. Add eggs and vegetable oil, then beat until well blended and slightly pale. Stir in vanilla extract.
  4. Gradually add dry ingredients to wet ingredients, stirring gently. Fold in squeezed zucchini and chocolate chips. Avoid overmixing.
  5. Using an electric mixer, beat cream cheese, powdered sugar, vanilla extract, and heavy cream until smooth and creamy.
  6. Pour half the batter into a greased 9×5-inch loaf pan. Dollop half the cream cheese mixture over the batter. Repeat layers with remaining batter and cream cheese. Swirl gently with a knife or skewer to create a marbled effect.
  7. Preheat oven to 350°F (175°C). Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out with a few moist crumbs. Tent with foil if top browns too quickly.
  8. Cool bread in pan for 15 minutes, then transfer to a wire rack to cool completely before slicing.
