  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt to taste
  • Black pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Pat the brisket dry with paper towels. Trim excess fat but leave about 1/4 inch fat cap for moisture. Season generously with salt, pepper, garlic powder, onion powder, and smoked paprika on all sides. Let it rest at room temperature for 30 minutes.
  2. Preheat oven to 300°F (150°C). Heat olive oil in a large skillet over medium-high heat. Sear the brisket fat side down first, about 4-5 minutes per side until a rich brown crust forms. Transfer to a roasting pan.
  3. In a bowl, whisk together bourbon, brown sugar, ketchup, apple cider vinegar, Worcestershire sauce, and a pinch of salt and pepper until smooth and slightly thick.
  4. Brush half of the bourbon glaze over the brisket. Cover loosely with foil to keep moisture in. Roast for 2 hours, then baste with remaining glaze, uncover, and roast for another 1-2 hours until internal temperature reaches 195°F (90°C).
  5. Remove from oven and tent with foil. Let rest for 20 minutes to redistribute juices. Slice thinly against the grain and serve.
