This warm, creamy caramel apple dip with crunchy toffee bits is the ultimate fall treat. Made with simple ingredients in a slow cooker, it’s perfect for gatherings or a cozy night in.

  • 16 ounces cream cheese, softened to room temperature
  • 1 cup caramel sauce (store-bought, like Mrs. Richardson’s)
  • 1/2 cup brown sugar, packed (light or dark)
  • 1 teaspoon vanilla extract (pure vanilla preferred)
  • 1/2 teaspoon sea salt, plus extra for sprinkling
  • 1 cup toffee bits (Heath bits recommended)
  • 1/4 cup heavy cream
  • Apple slices for serving (Honeycrisp, Granny Smith, Fuji recommended)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge about 1 hour before starting. It should be room temperature—soft enough that pressing with finger leaves a slight indent. If forgotten, microwave in 10-second bursts, being careful not to melt it. Cut into cubes first for faster softening.
  2. Beat the cream cheese: In a medium bowl, beat softened cream cheese with a hand mixer on medium speed until completely smooth and fluffy, about 2 minutes. Scrape down sides of bowl with rubber spatula halfway through.
  3. Add the caramel and sugar: Pour in caramel sauce, brown sugar, and vanilla extract. Beat again on low speed until well combined. Mixture will look loose—that’s normal.
  4. Stir in the salt and cream: Add sea salt and heavy cream. Stir by hand with spatula until salt is dissolved and cream is fully incorporated. Taste—should be sweet with a hint of salt. Add another pinch of salt if it tastes flat.
  5. Transfer to the slow cooker: Spray inside of slow cooker with non-stick spray. Pour cream cheese mixture in and spread into an even layer.
  6. Cook on low: Set slow cooker to low heat and cook for 1.5 to 2 hours. After first hour, give it a good stir. Dip should be warm all the way through and slightly thickened, with bubbles around edges.
  7. Add the toffee bits: About 15 minutes before serving, sprinkle toffee bits over top of dip. Do not stir them in—let them sit on top to stay crunchy.
  8. Finish with a sprinkle of salt: Right before serving, add a light sprinkle of flaky sea salt over the top.
  9. Serve warm: Arrange apple slices around slow cooker or transfer dip to a serving bowl surrounded by apples. Dip will stay warm in slow cooker on warm setting for hours.

Notes

Don’t rush the cream cheese—let it soften for a smooth dip. Always use low heat to avoid scorching. Add toffee bits at the end to keep them crunchy. For a double batch, use a 4-quart slow cooker. Leftovers can be refrigerated for up to 5 days; reheat gently on stovetop or microwave.
