  • ½ teaspoon vanilla extract

Instructions

  1. Make the Pie Crust: In a food processor, pulse the flour and salt. Add the cold butter cubes and pulse until the mixture resembles coarse crumbs (pea-sized bits). Slowly add ice water, one tablespoon at a time, pulsing just until the dough starts to come together. Don’t overwork it. Flatten the dough into a disk, wrap in plastic, and chill for at least 30 minutes.
  2. Roll Out the Dough: On a lightly floured surface, roll the chilled dough into a 12-inch circle. Transfer it carefully to the 9-inch pie dish, trimming excess dough and crimping edges as desired. Chill again for 15 minutes to prevent shrinking during baking.
  3. Blind Bake the Crust: Preheat the oven to 375°F (190°C). Line the crust with parchment paper and fill with pie weights or dried beans. Bake for 15 minutes, remove weights and parchment, then bake another 5 minutes until lightly golden. Let cool slightly.
  4. Prepare the Pumpkin Filling: In a large bowl, whisk together pumpkin puree, brown sugar, and eggs until smooth. Gradually add heavy cream, milk, and vanilla. Stir in spices and salt until well combined. The filling should be silky and pourable but not runny.
  5. Fill and Bake: Pour the filling into the pre-baked crust. Bake at 350°F (175°C) for 45-50 minutes, or until the center is just set with a slight jiggle. Avoid overbaking to keep it creamy. Remove from oven and cool completely on a wire rack.
  6. Chill the Pie: Cover loosely with plastic wrap and refrigerate for at least 4 hours or overnight to let the flavors meld and the texture firm up.
