  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 teaspoons pumpkin pie spice (or 1 tsp cinnamon, ½ tsp ginger, ¼ tsp nutmeg, ¼ tsp cloves)
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 6 oz (170g) cream cheese, softened (full-fat recommended)
  • 2 tablespoons granulated sugar (for cream cheese swirl)
  • 1 large egg yolk (for cream cheese swirl)
  • 1 tablespoon sugar (optional, for topping)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
  2. In a medium bowl, whisk together flour, pumpkin pie spice, baking soda, baking powder, and salt. Set aside.
  3. In a large bowl, whisk together granulated sugar and brown sugar until no lumps remain. Add pumpkin puree, vegetable oil, eggs, and vanilla extract. Whisk until smooth and well combined.
  4. Pour dry ingredients into wet mixture. Use a rubber spatula to gently fold together until just combined (a few lumps are fine; do not overmix).
  5. In a small bowl, beat softened cream cheese with 2 tablespoons sugar and egg yolk until smooth and creamy.
  6. Divide muffin batter evenly among the 12 cups, filling each about ¾ full.
  7. Drop about 1 tablespoon of cream cheese mixture onto the center of each muffin (do not spread).
  8. Using a toothpick or skewer, gently drag through the cream cheese into the batter in a figure-eight or zigzag motion (2-3 passes only).
  9. If desired, sprinkle a pinch of sugar over each muffin for a crunchy top.
  10. Bake for 18-22 minutes, until a toothpick inserted into the center (avoiding cream cheese) comes out clean or with a few moist crumbs. Tops should be golden and spring back when lightly touched.
  11. Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

Room temperature ingredients are key for best results. Do not skip the egg yolk in the cream cheese mixture—it stabilizes the swirl. For gluten-free, use a 1:1 gluten-free baking flour blend. For dairy-free, use block-style plant-based cream cheese. Muffins taste even better the next day. Store in an airtight container at room temperature for up to 3 days, or freeze individually wrapped for up to 3 months.
