  • 1 1/2 cups powdered sugar (180g), sifted
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract, for glaze
  • Pinch of salt, for glaze

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, pumpkin pie spice, cinnamon, and salt.
  3. Cut cold butter into the flour mixture using a pastry cutter or two forks until it resembles coarse meal with pea-sized butter pieces.
  4. In a separate bowl, whisk together pumpkin puree, heavy cream, egg, and vanilla extract until smooth.
  5. Pour wet ingredients into dry ingredients and mix with a spatula until just combined. Dough will be shaggy and sticky.
  6. Turn dough onto a lightly floured surface. Gently pat into a 1-inch thick circle (about 8 inches in diameter). Cut into 8 equal wedges.
  7. Place scones on prepared baking sheet, spacing 2 inches apart. Bake for 14-16 minutes until bottoms are golden and tops are set. Cool on sheet for 5 minutes, then transfer to a cooling rack.
  8. While scones cool, make the brown butter glaze: In a small saucepan over medium heat, melt butter. Swirl occasionally until it turns amber and smells nutty (3-4 minutes). Remove from heat immediately.
  9. In a medium bowl, whisk together powdered sugar, 2 tablespoons milk, vanilla extract, and a pinch of salt. Slowly pour in warm brown butter while whisking. Add more milk, 1 teaspoon at a time, until thick but pourable.
  10. Drizzle glaze over slightly warm scones. Let set for 5 minutes before serving.

Notes

Keep butter and dough cold for flaky scones. Do not overmix. Watch brown butter carefully to avoid burning. Glaze while scones are still slightly warm for best texture.
