  • 1 teaspoon (5 g) baking soda
  • ½ teaspoon (2.5 g) salt

  • 1 ¾ cups (350 g) granulated sugar
  • 2 large eggs, room temperature
  • 1 cup (240 ml) buttermilk (or 1 cup milk + 1 tablespoon lemon juice, let sit 5 minutes)
  • 1 teaspoon (5 ml) vanilla extract
  • 1 teaspoon (5 ml) distilled white vinegar
  • 2 tablespoons (30 ml) red food coloring
  • 8 oz (227 g) cream cheese, softened
  • ½ cup (115 g) unsalted butter, softened
  • 4 cups (480 g) powdered sugar, sifted
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 9-inch cake pans and line bottoms with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, mixing well after each addition.
  5. In a separate bowl, stir together buttermilk, vanilla extract, vinegar, and red food coloring.
  6. Add dry ingredients to butter mixture in three parts, alternating with wet ingredients, beginning and ending with dry. Mix gently after each addition.
  7. Divide batter evenly between prepared pans and smooth tops.
  8. Bake 25-30 minutes or until a toothpick inserted in center comes out clean.
  9. Cool cakes in pans for 10 minutes, then invert onto cooling rack to cool completely.
  10. Beat cream cheese and butter until smooth. Gradually add powdered sugar and beat until fluffy. Mix in vanilla extract and salt.
  11. Slice each cake layer horizontally to create 4 thin layers total.
  12. Assemble cake by layering red velvet layers with frosting between each. Use frosting to create white stripes and fill in the flag pattern on top.
  13. If frosting is too thick, add a teaspoon of milk to loosen. Chill cake in fridge for 15 minutes if frosting gets too soft during assembly.
