Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, chop the sun-dried tomatoes, and grate the Parmesan cheese.
  2. Pat the chicken thighs dry with paper towels. Season both sides with salt, pepper, garlic powder, and onion powder.
  3. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the chicken thighs in a single layer and cook undisturbed for 4-5 minutes until golden brown. Flip and cook another 3-4 minutes. Transfer chicken to a plate and set aside.
  4. Reduce heat to medium. In the same pot, add the diced onion and cook for 2-3 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant.
  5. Stir in the tomato paste and cook for 1 minute. Sprinkle the flour over the onion mixture and stir for another minute.
  6. Slowly pour in the chicken broth while whisking constantly to prevent lumps. Add the heavy cream, chopped sun-dried tomatoes, dried oregano, and red pepper flakes (if using). Stir and bring to a gentle simmer.
  7. While the soup simmers, shred the browned chicken using two forks. Add the shredded chicken and any accumulated juices back to the pot. Let simmer for 5 minutes.
  8. Remove the pot from the heat. Stir in the grated Parmesan cheese until fully melted and incorporated. Taste and adjust seasoning.
