Ingredients

Scale
  • 1 pound raw medium shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 3 tablespoons unsalted butter, divided
  • 1 tablespoon olive oil
  • Juice of 1 lime (about 2 tablespoons)
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 ripe mango, peeled and julienned or diced
  • 1 cup shredded red cabbage
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 small jalapeño, finely chopped (optional)
  • 3 tablespoons mayonnaise
  • 1 tablespoon honey
  • 8 small corn or flour tortillas

Instructions

  1. Prep the Mango Slaw (10 minutes): In a medium bowl, combine shredded red cabbage, diced mango, finely chopped red onion, cilantro, and jalapeño (if using). In a small bowl, whisk together mayonnaise, honey, and lime juice. Pour this dressing over the slaw mix and toss gently until everything is well coated. Set aside in the fridge to chill and meld flavors while you cook the shrimp.
  2. Season the Shrimp (5 minutes): Pat the shrimp dry with paper towels. In a bowl, toss shrimp with chili powder, smoked paprika, salt, and pepper.
  3. Cook the Shrimp (7-8 minutes): Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. When the butter melts and starts to foam, add the shrimp in a single layer. Cook for 2 minutes without moving them to get a nice sear, then flip.
  4. Add Garlic & Butter (2-3 minutes): As soon as you flip the shrimp, add the minced garlic and remaining 2 tablespoons of butter to the pan. Stir gently, spooning the garlic butter over the shrimp as they finish cooking until shrimp turn pink and opaque.
  5. Warm the Tortillas (2-3 minutes): While shrimp finishes, warm tortillas in a dry skillet over medium heat or wrap in foil and place in a warm oven (about 300°F / 150°C).
  6. Assemble the Tacos (5 minutes): Lay warm tortillas flat and spoon garlic butter shrimp down the center. Top generously with zesty mango slaw. Optionally squeeze extra lime and sprinkle fresh cilantro on top.

Notes

Do not overcrowd the pan when cooking shrimp to avoid steaming. Dry shrimp well before cooking for a good sear. Add garlic and butter after flipping shrimp to prevent burning. Keep mango slaw chilled until serving. Warm tortillas just before assembling. For gluten-free, use corn tortillas and substitute mayonnaise if needed.
