  • 1 can (10.5 ounces) cream of mushroom soup
  • ½ cup (120 ml) milk
  • 1 tablespoon (15 ml) Worcestershire sauce
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ teaspoon salt
  • 3 medium shallots (about 4 ounces or 115 grams)
  • ¼ cup (30 grams) all-purpose flour
  • ¼ teaspoon salt (for shallots)
  • ½ cup (120 ml) neutral oil (canola or vegetable)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the frozen green beans in a microwave-safe bowl with 2 tablespoons of water. Cover and microwave on high for 4-5 minutes until tender-crisp. Drain any excess water.
  3. In a large bowl, whisk together the cream of mushroom soup, milk, Worcestershire sauce, garlic powder, black pepper, and salt until smooth.
  4. Add the cooked green beans to the sauce mixture and stir gently until evenly coated.
  5. Pour the green bean mixture into an 8×8-inch baking dish and spread into an even layer.
  6. Bake for 15 minutes until the sauce is bubbly and the edges are slightly browned.
  7. While the casserole bakes, peel and thinly slice the shallots into rings (about ⅛-inch thick).
  8. In a shallow bowl, mix the flour and ¼ teaspoon salt. Toss the shallot slices in the flour mixture until well-coated, then shake off excess.
  9. Heat the oil in a small skillet over medium-high heat. Fry the shallots in batches for 2-3 minutes until golden brown and crispy. Transfer to a paper towel-lined plate and sprinkle with a tiny pinch of salt.
  10. Remove the casserole from the oven and sprinkle the crispy shallots evenly over the top. Serve immediately.

Notes

For best results, use regular condensed cream of mushroom soup (not low-fat). The crispy shallots can be made up to 3 days in advance and stored in an airtight container at room temperature. To make ahead, assemble the casserole (without shallots) up to 24 hours in advance and refrigerate; add 10 minutes to baking time. The casserole tastes even better the next day.
