Refreshing Peach Mint Julep Popsicles

A simple and refreshing summer treat combining juicy peaches, fresh mint, and a splash of bourbon for a grown-up twist. These popsicles are quick to make and perfect for cooling down on hot days.

Ingredients

  • 3 large ripe peaches, peeled and sliced (about 4 cups / 600g)
  • 15 fresh mint leaves, lightly muddled
  • 1/2 cup (120 ml) simple syrup (equal parts sugar and water)
  • 2 tablespoons (30 ml) bourbon (optional)
  • 1 tablespoon (15 ml) fresh lemon juice
  • 1/2 cup (120 ml) water
  • Pinch of salt

Instructions

  1. Make the simple syrup: Combine 1/2 cup (100g) granulated sugar with 1/2 cup (120 ml) water in a small saucepan. Heat gently over medium heat, stirring until sugar dissolves completely. Remove from heat and let cool to room temperature, about 15 minutes.
  2. Prepare the peaches: Peel peaches if desired, then slice and pit them. You need about 3 large peaches or 4 cups (600g) sliced.
  3. Muddle the mint: Place fresh mint leaves in a small bowl and gently bruise with a muddler or wooden spoon to release oils. Don’t pulverize—the goal is a light crush for fresh aroma.
  4. Blend the mixture: In your blender, add the peaches, muddled mint, cooled simple syrup, 2 tablespoons (30 ml) bourbon, 1 tablespoon (15 ml) fresh lemon juice, 1/2 cup (120 ml) water, and a pinch of salt. Blend on high until smooth but still slightly textured, about 30 seconds.
  5. Taste and adjust: Give your peach mint julep popsicle mixture a quick taste. Add a bit more syrup if you want sweeter, or a splash more lemon juice for brightness.
  6. Pour into molds: Carefully fill your popsicle molds, leaving a little space at the top for expansion. Insert sticks and place in the freezer.
  7. Freeze: Freeze for at least 6 hours or overnight until solid. For best results, avoid opening the freezer repeatedly to keep popsicles firm.
  8. Unmold and enjoy: To release, run warm water briefly over the outside of molds, then gently pull popsicles free.

Notes

For a non-alcoholic version, omit bourbon and replace with extra peach juice or water. To add texture, reserve some finely diced peaches and stir into the mixture before freezing. Use ripe but firm peaches for best flavor and texture. Muddle mint gently to avoid bitterness. Silicone molds are recommended for easy unmolding.
