Instructions

  1. Caramelize the onions: Heat 1 tablespoon olive oil or butter in a skillet over medium-low heat. Add thinly sliced onions with a pinch of salt. Stir occasionally, letting onions soften and turn golden. Add a splash of water if sticking. Optionally sprinkle sugar halfway through. Cook about 25 minutes until soft and richly browned.
  2. Prepare the chicken: In a mixing bowl, toss 2 cups shredded rotisserie chicken with 1/2 cup BBQ sauce until evenly coated. Set aside to marinate briefly.
  3. Preheat the oven to 475°F (245°C). Place a pizza stone inside to heat if available, or prepare a baking sheet by lightly oiling or lining with parchment paper.
