  • ½ cup chicken broth (low sodium preferred)
  • 1 tablespoon Dijon mustard
  • ½ cup heavy cream

Instructions

  1. Pat the pork chops dry with paper towels to remove excess moisture. Season both sides generously with salt and pepper. Let rest at room temperature for about 10 minutes.
  2. Slice mushrooms thinly and mince garlic finely.
  3. Heat a cast iron or heavy skillet over medium-high heat. Add olive oil and heat until shimmering but not smoking.
  4. Add pork chops to the pan without overcrowding. Sear undisturbed for 4-5 minutes per side for 1-inch thick chops until a deep golden crust forms. Adjust time for thicker chops. Transfer chops to a warm plate and tent with foil to rest.
  5. Lower heat to medium and add butter to the same pan. When melted, add mushrooms and sauté for 4-5 minutes until softened and browned, stirring occasionally.
  6. Stir in garlic and thyme leaves; cook for about 30 seconds until fragrant.
  7. Pour in chicken broth, scraping up browned bits from the pan bottom.
  8. Stir in Dijon mustard and heavy cream. Bring to a gentle simmer while stirring and let sauce thicken for 3-4 minutes. Add more broth or cream if too thick.
  9. Return pork chops to the pan, nestle in the sauce, and spoon sauce over the top. Simmer together for 2-3 minutes to meld flavors and warm the meat.
  10. Taste sauce and adjust seasoning with salt and pepper as needed. Serve immediately with extra sauce spooned over the chops.
