  • 8 slices bacon, chopped
  • 34 medium jalapenos, seeded and diced
  • 8 oz (225 g) cream cheese, softened
  • ½ cup (120 ml) sour cream
  • 1 cup (100 g) sharp cheddar cheese, shredded
  • ½ cup (50 g) mozzarella cheese, shredded
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp freshly ground black pepper
  • 2 tbsp fresh chives or green onions, thinly sliced (optional)

Instructions

  1. Heat skillet over medium heat. Add chopped bacon and cook until crispy, about 8 minutes, stirring occasionally. Transfer bacon to paper towel-lined plate to drain. Keep about 1 tablespoon of bacon fat in the pan.
  2. In the same skillet with bacon fat, add diced jalapenos. Sauté for 2-3 minutes until softened but still vibrant green. Remove from heat and let cool slightly.
  3. In a large mixing bowl, combine softened cream cheese and sour cream. Beat with a spoon or spatula until smooth and creamy.
  4. Stir in shredded sharp cheddar and mozzarella cheeses. Add garlic powder, onion powder, smoked paprika, and black pepper. Mix well to combine.
  5. Fold in crispy bacon pieces and sautéed jalapenos until evenly distributed.
  6. Scrape mixture into prepared 8×8 inch baking dish, smoothing the top with a spatula.
  7. Bake in preheated oven at 375°F (190°C) for 20-25 minutes until bubbly and lightly golden on top. Optionally broil for 1-2 minutes for a crusty surface, watching carefully to avoid burning.
  8. Remove from oven and let cool for 5 minutes. Garnish with fresh chives or green onions if using. Serve warm with tortilla chips, crusty bread, or fresh veggies.

Notes

Use thick-cut bacon for best texture. Keep bacon grease to sauté jalapenos for extra flavor. Soften cream cheese to avoid lumps. Watch dip closely near end of baking to prevent overbaking. Broil briefly for a crusty top if desired. Can substitute sour cream with Greek yogurt or use dairy-free cream cheese for dietary needs. For vegetarian version, omit bacon and add smoked paprika and toasted nuts.
