  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (200g) granulated sugar
  • 2 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 3/4 cup (95g) all-purpose flour
  • 1/3 cup (35g) unsweetened cocoa powder, sifted
  • 1/4 tsp salt
  • 3/4 cup (150g) granulated sugar (for caramel)
  • 6 tbsp (85g) unsalted butter, cubed (for caramel)
  • 1/3 cup (80ml) heavy cream, warmed (for caramel)
  • 2 tbsp (30ml) whiskey
  • Pinch of salt (for caramel)
  • 6 slices thick-cut bacon, cooked crispy and chopped

Instructions

  1. Preheat oven to 350°F (175°C). Grease an 8×8 inch baking pan or line mini muffin tins with paper liners.
  2. Cook bacon until crispy, drain on paper towels, then chop into small pieces. Set aside.
  3. In a large bowl, whisk together melted butter and granulated sugar until smooth.
  4. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  5. In a separate bowl, sift together flour, cocoa powder, and salt.
  6. Gradually fold dry ingredients into wet mixture until just combined; do not overmix.
  7. Pour batter into prepared pan or spoon into mini muffin cups, filling about 2/3 full.
  8. Bake 20-25 minutes for pan or 12-15 minutes for mini bites until a toothpick comes out with a few moist crumbs.
  9. While brownies bake, make whiskey caramel: melt sugar gently in a small saucepan over medium heat without stirring, swirling pan until amber.
  10. Quickly whisk in cubed butter until melted.
  11. Carefully add warmed heavy cream and stir until smooth.
  12. Remove from heat and whisk in whiskey and a pinch of salt.
  13. Cool caramel slightly until thick but still pourable.
  14. Let brownies cool for 10 minutes after baking.
  15. Spoon or drizzle whiskey caramel over brownies or each bite, then sprinkle generously with chopped bacon.
  16. Let caramel set for about 15 minutes before serving to avoid drips.

Notes

Do not stir sugar while melting for caramel; swirl pan instead. Use warm cream to prevent caramel seizing. Watch heat carefully to avoid burning caramel. For fudgy brownies, avoid overmixing and overbaking. Let batter rest a few minutes before baking for better texture. Caramel can be made ahead and reheated gently.
