  • 1.5 pounds boneless, skinless chicken thighs
  • 2 cups roasted and peeled Hatch green chiles, chopped (fresh or jarred)
  • 2 cans (15 oz each) Great Northern or cannellini white beans, drained and rinsed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 tablespoons fresh lime juice
  • Optional garnishes: chopped fresh cilantro, diced avocado, sour cream, shredded cheese

Instructions

  1. If using fresh Hatch green chiles, roast them over an open flame or under a broiler until blackened on all sides. Place in a sealed bowl or plastic bag for 10 minutes to steam, then peel off skins, remove seeds, and chop coarsely. If using jarred, simply chop.
  2. Dice the onion and mince the garlic. Set aside.
  3. Trim excess fat from chicken thighs and cut into bite-sized pieces. No need to brown.
  4. In the slow cooker, combine chicken, roasted Hatch chiles, diced onion, minced garlic, drained white beans, chicken broth, cumin, and oregano. Stir gently to mix evenly. Season lightly with salt and pepper.
  5. Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until chicken is tender and flavors meld.
  6. About 30 minutes before serving, taste and adjust seasoning. Stir in fresh lime juice. For a thicker stew, mash some beans against the side of the cooker and stir.
  7. Serve hot, garnished with chopped cilantro, diced avocado, sour cream, or shredded cheese as desired. Enjoy with warm tortillas or crusty bread.

Notes

Roasting fresh Hatch green chiles adds a smoky depth to the stew but jarred chiles can be used as a convenient substitute. Season gradually and add lime juice last to brighten flavors. Check the stew around 6 hours to avoid overcooking the chicken. For extra heat, add jalapeños or cayenne with the garlic. Beans can be added halfway through cooking for firmer texture if preferred.
