Smoky Chipotle Ranch Deviled Eggs: Best Easy Appetizer

Creamy, smoky, and a little spicy, these deviled eggs combine chipotle heat with cool ranch creaminess for an irresistible appetizer that disappears fast at any gathering.

  • 12 large eggs
  • 1/3 cup mayonnaise
  • 2 tablespoons ranch dressing mix
  • 12 chipotle peppers in adobo sauce, minced
  • 1 tablespoon adobo sauce
  • 1 teaspoon lime juice
  • 1/4 teaspoon smoked paprika
  • Fresh cilantro, chopped (optional)
  • Pickled jalapeño slices (optional)

Instructions

  1. Place the eggs in a single layer in a pot and cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pot, turn off the heat, and let sit for exactly 10 minutes. While the eggs cook, prepare an ice bath in a large bowl. After 10 minutes, transfer the eggs to the ice bath and let them cool completely—about 5 minutes.
  2. Gently tap each egg on the counter to crack the shell all over, then roll it between your palms to loosen the shell. Start peeling from the wider end where the air pocket is. Rinse any small shell pieces off under cool water. Pat the eggs dry, then slice each one in half lengthwise with a sharp knife. Pop the yolks into a medium bowl and arrange the whites on a serving platter.
  3. Mash the yolks with a fork until they’re completely broken up with no large chunks. Add the mayonnaise, ranch dressing mix, minced chipotle pepper, adobo sauce, and lime juice. Stir everything together until it’s smooth and well combined. Taste it. If you want more heat, add another half pepper or a little more adobo sauce. If it seems too thick, add a tiny splash of pickle juice or water to loosen it up.
  4. Spoon the filling into a piping bag or zip-top bag. If using a zip-top bag, squeeze the filling toward one corner and snip off about 1/2 inch of the tip. Pipe the filling into each egg white, mounding it slightly in the center.
  5. Sprinkle the filled eggs with smoked paprika. Top each one with a small cilantro leaf and a pickled jalapeño slice if using. Serve immediately, or cover loosely with plastic wrap and refrigerate for up to 4 hours before serving.

Notes

For best results, use eggs that are at least a week old for easier peeling. Start with one chipotle pepper and add more to taste. The filling can be made ahead and stored separately. For a milder version, use only the adobo sauce without the chipotle pepper. These eggs taste even better after a few hours in the fridge as the flavors meld.
