Instructions

  1. Clean the seeds: If using fresh pumpkin seeds, place them in a colander and rinse under cold water, separating seeds from the stringy flesh. Shake off excess water.
  2. Boil the seeds: In a medium saucepan, bring 2 cups of water to a rolling boil. Add 1 teaspoon of salt and stir to dissolve. Add the pumpkin seeds and boil for exactly 10 minutes.
  3. Drain and dry: Drain the seeds in a colander. Spread them on a clean kitchen towel and pat dry. Let them sit for about 5 minutes while preheating the oven.
  4. Preheat the oven: Set oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  5. Season the seeds: In a medium mixing bowl, combine the dried pumpkin seeds with 1 tablespoon of olive oil. Toss well. Add 1 teaspoon smoked paprika, ½ teaspoon garlic powder, ¼ teaspoon ground cumin, ¼ teaspoon cayenne pepper, and a pinch of salt (about ¼ teaspoon). Toss until evenly coated.
  6. Spread on baking sheet: Pour the seasoned seeds onto the prepared baking sheet and spread in a single, even layer.
  7. Roast the seeds: Roast for 20-25 minutes, stirring halfway through. At the 15-minute mark, stir with a spatula. Seeds are done when fragrant, golden brown, and make a slight popping sound when pressed.
