These tender honey butter cornbread muffins are a quick and easy homemade snack with a moist, melt-in-your-mouth texture and a sweet honey butter glaze that adds irresistible flavor.

  • 1 cup (125 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup (50 g) granulated sugar
  • 1/2 teaspoon salt
  • 2 large eggs, room temperature
  • 3/4 cup (180 ml) buttermilk or sour cream
  • 1/4 cup (60 g) unsalted butter, melted, plus extra for brushing
  • 1/4 cup (85 g) honey, plus extra for honey butter glaze

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your muffin tin or line with paper liners.
  2. In a large bowl, whisk together cornmeal, all-purpose flour, baking powder, sugar, and salt.
  3. In a separate bowl, beat eggs, then stir in buttermilk or sour cream, melted butter, and honey until smooth.
  4. Pour the wet mixture into the dry ingredients. Gently fold together until just combined; do not overmix.
  5. Divide batter evenly into 12 muffin cups, filling each about 3/4 full.
  6. Bake for 15-18 minutes, or until tops are golden brown and a toothpick inserted in the center comes out clean.
  7. While muffins bake, gently warm 2 tablespoons unsalted butter and 2 tablespoons honey until melted and combined to make the honey butter glaze.
  8. As soon as muffins come out of the oven, brush the warm honey butter glaze generously on top.
  9. Let muffins cool in the pan for 5 minutes, then transfer to a wire rack. Serve warm or at room temperature.

Notes

Do not overmix the batter to keep the muffins tender. Use room temperature eggs and dairy for best texture. Brush honey butter glaze immediately after baking for best absorption and shine. If muffins brown too quickly, tent with foil during last 5 minutes of baking. For dairy-free, substitute buttermilk/sour cream with coconut yogurt or almond milk with lemon juice and use coconut oil instead of butter.
