This crockpot shredded chicken breast recipe delivers tender, juicy chicken every time with minimal effort. Perfect for meal prep and versatile for many dishes.

Ingredients

Scale
  • 2 pounds boneless, skinless chicken breasts
  • 1 cup low-sodium chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil (optional)
  • 1 tablespoon fresh lemon juice (optional)

Instructions

  1. Rinse and pat dry chicken breasts. Trim any excess fat or tendons.
  2. In a small bowl, mix garlic powder, onion powder, paprika, salt, and black pepper. Rub seasoning evenly over both sides of chicken breasts. Drizzle olive oil if using.
  3. Place seasoned chicken breasts flat in the bottom of the crockpot. Pour chicken broth over the top.
  4. Cover and cook on low for 4-6 hours or on high for 2-3 hours until chicken reaches 165°F and shreds easily.
  5. Use two forks to shred the chicken directly in the crockpot, mixing with the broth.
  6. Optionally, squeeze fresh lemon juice over shredded chicken and stir to combine.
  7. Serve immediately or cool and store in airtight containers for meal prep.

Notes

Avoid lifting the crockpot lid during cooking to prevent heat loss. Use broth instead of water for moisture and flavor. Shred chicken while warm for best texture. If using frozen chicken breasts, add an extra hour to cooking time.
