A creamy, spicy buffalo chicken dip baked inside a sweet, roasted sugar pumpkin. This show-stopping appetizer is perfect for fall potlucks, game days, and holiday gatherings, and it’s surprisingly easy to make.

  • 2 cups cooked, shredded chicken (rotisserie chicken works great)
  • 8 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce (Frank’s RedHot Original recommended)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/2 cup shredded mozzarella cheese
  • 2 green onions, thinly sliced
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1 medium sugar pumpkin (about 4–5 pounds)
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika (optional)
  • Assorted dippers: tortilla chips, baguette slices, crackers, celery sticks, carrot sticks, or pretzel chips
  • Extra green onions and a drizzle of ranch for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or aluminum foil.
  2. Prepare the pumpkin: Using a sharp knife, cut a circle around the top of the pumpkin (2-3 inches in diameter) at a slight angle. Remove the top and set aside. Scoop out all seeds and stringy pulp from the inside.
  3. Season the pumpkin: In a small bowl, whisk together olive oil, salt, pepper, and smoked paprika (if using). Brush the inside and outside of the pumpkin (including the lid) with the oil mixture.
  4. Pre-bake the pumpkin: Place the pumpkin and lid on the prepared baking sheet. Bake for 15-20 minutes, until slightly softened but still sturdy. Remove and let cool for a few minutes.
  5. Make the buffalo chicken dip: In a medium bowl, combine softened cream cheese, shredded chicken, buffalo wing sauce, ranch dressing, garlic powder, and black pepper. Mix until well combined.
  6. Assemble the pumpkin bread bowl: Spoon the dip mixture into the pre-baked pumpkin cavity, leaving about 1/2 inch of space at the top. Top with shredded cheddar and mozzarella cheese.
  7. Bake the assembled pumpkin: Place the filled pumpkin back on the baking sheet. Put the lid on (or next to it). Bake for 25-30 minutes, until the dip is hot and bubbly and the cheese is melted and golden. Tent with foil if the top browns too quickly.
  8. Garnish and serve: Let cool for 5-10 minutes. Sprinkle sliced green onions over the top and drizzle with extra ranch if desired. Place on a serving platter surrounded by dippers.

Notes

Don’t skip the pre-bake step—it ensures the pumpkin is tender when the dip is done. Use a sugar pumpkin (not a carving pumpkin) for best flavor and texture. Let the dish rest for 5-10 minutes before serving to avoid burns and allow the dip to set. The dip can be made a day ahead and stored in the fridge; assemble and bake just before serving.
