Ultimate Loaded Nacho Bar with Easy Slow Cooker Queso

A crowd-pleasing nacho bar featuring velvety slow cooker queso, seasoned beef, and endless toppings. Perfect for game days, parties, or any gathering where you want to feed a crowd with minimal effort.

  • 1 pound block Velveeta, cut into 1-inch cubes
  • 1 can (10 oz) Rotel tomatoes with green chilies, undrained
  • 1 cup evaporated milk
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cumin
  • Pinch of cayenne pepper (optional)
  • Salt to taste
  • 1 bag (13-16 oz) restaurant-style tortilla chips
  • 1 pound ground beef (80/20 preferred)
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup shredded Mexican blend cheese
  • 1 cup sour cream
  • 1 cup pico de gallo or salsa
  • 1 avocado, diced
  • 1/2 cup sliced black olives (optional)
  • 1/4 cup pickled jalapeños
  • Fresh cilantro, chopped
  • Lime wedges

Instructions

  1. Add cubed Velveeta, undrained Rotel, evaporated milk, chili powder, garlic powder, cumin, and cayenne (if using) to a slow cooker. Stir gently. Cover and cook on LOW for 1-2 hours, stirring occasionally, until cheese is fully melted and smooth. Switch to WARM setting to keep dippable for hours. Taste and add salt if needed.
  2. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it up, until browned and cooked through (6-8 minutes). Drain excess fat. Add taco seasoning and 1/4 cup water; simmer 2-3 minutes until liquid is mostly absorbed. Set aside (can be made up to 3 days ahead).
  3. Drain and rinse black beans. Heat in a small saucepan with a pinch of cumin and salt, or warm refried beans if using. Keep warm.
  4. Dice avocado and toss with lime juice to prevent browning. Chop cilantro. Slice jalapeños if needed. Arrange sour cream, pico de gallo or salsa, olives, and shredded cheese in small bowls.
  5. About 15 minutes before serving, spread tortilla chips on a large platter or sheet pan. Optionally, sprinkle with shredded Mexican blend cheese and bake at 350°F for 3-5 minutes until melted. Alternatively, serve chips in a bowl for DIY assembly.
  6. Place slow cooker with queso on the table or counter. Arrange bowls of beef, beans, and fresh toppings around it. Let everyone build their own plate: chips, queso, then toppings. Finish with lime juice and cilantro.

Notes

For best texture, use block Velveeta (not pre-shredded) and evaporated milk. The queso can be made up to 3 days ahead and reheated. Leftover queso is great on eggs, baked potatoes, or mac and cheese. For a vegetarian version, skip the beef and add extra beans, roasted corn, and sautéed peppers.
