  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon white vinegar
  • Salt and pepper, to taste
  • 1/3 cup black olives, pitted and finely chopped or blended into a tapenade
  • 12 teaspoons sriracha sauce
  • A pinch of smoked paprika (optional)

Instructions

  1. Place 6-8 large eggs in a medium pot and cover with cold water by about an inch (approximately 4 cups/950 ml). Bring water to a boil over medium-high heat, then cover and remove from heat. Let sit for 12 minutes.
  2. Immediately transfer eggs to an ice bath to stop cooking and make peeling easier.
  3. Gently tap each egg on a hard surface to crack the shell, then peel under running cold water to remove shells cleanly.
  4. Slice eggs in half lengthwise and carefully scoop out the yolks into a bowl, setting the whites aside on a serving platter.
  5. Mash the yolks with a fork or press through a fine mesh sieve for extra smoothness.
  6. Add 3 tablespoons mayonnaise, 1 teaspoon Dijon mustard, 1 teaspoon white vinegar, salt, and pepper. Mix until creamy and well combined. Taste and adjust seasoning if needed.
  7. Finely chop or pulse 1/3 cup black olives in a food processor until almost paste-like but still with some texture. Add a tiny splash of olive oil if too dry. Transfer to a squeeze bottle or small piping bag for decorating.
  8. Spoon or pipe the yolk mixture back into the egg white halves, mounding it slightly.
  9. Using the squeeze bottle with olive tapenade, draw a small circle in the center of each egg. Then draw concentric circles around the center circle, spacing them evenly.
  10. Drag a toothpick from the center outward through the circles to create the spider web effect. Imperfections add charm.
  11. Using another squeeze bottle or spoon, drizzle thin lines of sriracha over the spider web pattern. Adjust amount based on heat preference.
  12. Sprinkle a pinch of smoked paprika over the eggs for a smoky finish and subtle color contrast.
  13. Chill the eggs in the refrigerator for at least 15 minutes before serving to let flavors meld.
