These no-bake granola bars are chewy, satisfying, and made with simple pantry staples like oats, peanut butter, honey, and chocolate chips. They hold together perfectly without any baking, making them an ideal grab-and-go snack for busy days.

  • 2 cups rolled oats
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/2 cup chocolate chips
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving overhang on two sides.
  2. In a medium saucepan over low heat, combine peanut butter, honey, and butter. Stir constantly until melted and smooth, about 2-3 minutes. Do not let it boil.
  3. Remove from heat and stir in vanilla extract and salt.
  4. In a large mixing bowl, place rolled oats. Pour the warm peanut butter mixture over the oats and stir until every oat is coated.
  5. Fold in chocolate chips until evenly distributed.
  6. Transfer the mixture to the lined pan. Press down firmly and evenly with a spatula or piece of parchment paper.
  7. Refrigerate for at least 2 hours, or until firm.
  8. Lift the block out using the parchment overhang, place on a cutting board, and cut into 8-10 bars with a sharp knife.

Notes

Press the mixture firmly into the pan to prevent crumbling. For vegan option, use maple syrup instead of honey and coconut oil instead of butter. Store in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
