Quick and wholesome no-bake energy bites made with peanut butter, oats, honey, and mini chocolate chips—perfect for healthy school snacks and on-the-go treats.

Ingredients

Scale
  • 1 ½ cups (135 g) old-fashioned rolled oats
  • ¾ cup (180 g) natural creamy peanut butter
  • ¼ cup (85 g) honey
  • 2 tbsp (14 g) ground flaxseed (optional)
  • ¼ cup (43 g) mini chocolate chips
  • 1 tsp (5 ml) vanilla extract
  • Pinch of salt

Instructions

  1. Combine 1 ½ cups of rolled oats, 2 tablespoons of ground flaxseed, and a pinch of salt in a medium bowl.
  2. Add ¾ cup of creamy natural peanut butter, ¼ cup of honey, and 1 teaspoon of vanilla extract to the dry ingredients. Mix thoroughly until sticky and well combined.
  3. Gently fold in ¼ cup of mini chocolate chips.
  4. Cover the bowl with plastic wrap and chill in the refrigerator for 10-15 minutes to firm up the mixture.
  5. Scoop about 1 tablespoon of mixture at a time and roll into balls between your palms, yielding around 20-24 bites.
  6. Place the rolled bites on a parchment-lined baking sheet and chill again for at least 20 minutes before serving.

Notes

Use natural peanut butter without added sugars or oils for best flavor and texture. Chill mixture before rolling to prevent sticking. Wet hands lightly with cold water to roll bites easily. Adjust oats or honey to achieve preferred texture. Store in airtight container in fridge up to one week or freeze up to 3 months.
