Easy No-Churn Salted Caramel Ice Cream – Best Homemade Recipe

This no-churn salted caramel ice cream is creamy, salty, sweet, and completely irresistible. Made without an ice cream maker, it’s a showstopper dessert that you can make days in advance.

  • 2 cups (480 ml) heavy cream
  • 1 can (14 ounces / 397 g) sweetened condensed milk
  • 1/2 cup (120 ml) homemade or high-quality store-bought caramel sauce
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons flaky sea salt (plus more for topping)
  • Optional: 1/4 cup (60 ml) bourbon or dark rum

Instructions

  1. Whip the cream: Pour the cold heavy cream into a large mixing bowl. Using an electric hand mixer on medium-high speed, whip the cream until stiff peaks form, about 3-5 minutes.
  2. Combine the base: In a separate small bowl, whisk together the sweetened condensed milk, vanilla extract, and 1/2 cup of caramel sauce. If using bourbon or rum, add it here. Stir until smooth.
  3. Fold it together: Pour the caramel-condensed milk mixture over the whipped cream. Gently fold together with a rubber spatula until no white streaks remain, being careful not to overmix.
  4. Layer in the salt: Line a 9×5-inch loaf pan with parchment paper. Spoon one-third of the mixture into the pan and spread evenly. Sprinkle with about 1/2 teaspoon of flaky sea salt. Repeat with another third and another 1/2 teaspoon of salt, then top with the remaining mixture and remaining 1/2 teaspoon of salt. Drizzle extra caramel sauce on top if desired.
  5. Freeze: Cover the pan tightly with plastic wrap or a lid. Freeze for at least 6 hours, preferably overnight.
  6. Serve: Let the ice cream sit at room temperature for 5-10 minutes to soften slightly. Lift out of the pan using the parchment overhang. Slice or scoop, and top with extra caramel sauce and a pinch of flaky salt.

Notes

Do not overwhip the cream. Use cold everything (bowl, beaters, cream). Layer the salt strategically for pockets of salty crunch. Plan ahead—this ice cream needs at least 6 hours to freeze, but is best after 24 hours.
