  • 2 ½ tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup (200g) granulated sugar
  • ½ cup (115g) unsalted butter, softened
  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature (or 1 cup milk + 1 tbsp lemon juice/vinegar)
  • 2 tsp vanilla extract
  • 4 cups (about 600g) fresh strawberries, hulled and sliced
  • 2 tbsp granulated sugar (for strawberries)
  • 2 cups (480ml) heavy whipping cream, cold
  • ¼ cup (30g) powdered sugar
  • 1 tsp vanilla extract (for whipped cream)

Instructions

  1. Preheat oven to 350°F (175°C). Grease two 8-inch round pans with butter and lightly dust with flour or line with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. Using a mixer, beat softened butter and granulated sugar on medium speed until light and fluffy, about 3-4 minutes.
  4. Beat in eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. Alternately add dry ingredients and buttermilk to the butter mixture in 3 batches, beginning and ending with dry ingredients. Fold gently with a rubber spatula until combined.
  6. Divide batter evenly between prepared pans and smooth tops gently.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean and tops spring back when pressed lightly.
  8. Let cakes rest in pans for 10 minutes, then transfer to a wire rack to cool completely (about 1 hour).
  9. Toss sliced strawberries with 2 tbsp sugar and let macerate for at least 20 minutes.
  10. In a chilled bowl, beat cold heavy cream with powdered sugar and vanilla extract until soft peaks form.
  11. To assemble, place one cake layer on a serving plate. Spread whipped cream over it, then spoon macerated strawberries on top.
  12. Top with second cake layer and repeat with whipped cream and strawberries. Spread whipped cream over the top and garnish with whole or halved strawberries.
  13. Chill assembled cake before serving for best texture.

Notes

Use softened butter (not melting) for best creaming results. Sift dry ingredients to avoid lumps. Fold batter gently to keep it fluffy. Chill mixing bowl and beaters before whipping cream. Macerate strawberries to enhance juiciness. Cool cakes completely before assembling to prevent whipped cream from melting. For dairy-free option, substitute buttermilk with almond milk plus vinegar and use coconut cream for whipping.
