  • 1 teaspoon baking soda
  • ½ teaspoon fine sea salt
  • 1 teaspoon ground cinnamon
  • ¼ cup (57 grams) unsalted butter, melted and cooled slightly
  • ¼ cup (60 ml) vegetable oil (canola or avocado)
  • ¾ cup (150 grams) light brown sugar, packed
  • 2 large eggs, at room temperature
  • 1 ½ teaspoons pure vanilla extract
  • 3 medium very ripe bananas, mashed (about 1 cup)
  • ¼ cup (60 grams) plain yogurt or sour cream, at room temperature
  • ¾ cup (90 grams) walnuts, chopped and toasted

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center. Spread the chopped walnuts on a small baking sheet or in a dry skillet over medium heat. Toast for 3-5 minutes, shaking occasionally, until fragrant and slightly darker. Set aside to cool.
  2. Prepare your loaf pan: Cut a piece of parchment paper long enough to hang over the two long sides of a 9×5-inch loaf pan. Spray the pan lightly with nonstick spray, then press the parchment in.
  3. In a large bowl, whisk together the flour, baking soda, salt, and cinnamon until evenly combined. Set aside.
  4. In a separate medium bowl, whisk together the melted butter, vegetable oil, and brown sugar until smooth. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  5. Mash the bananas in a small bowl with a fork, leaving a few small lumps. Add the mashed bananas and yogurt (or sour cream) to the wet mixture. Whisk until combined.
  6. Pour the wet mixture into the bowl with the dry ingredients. Use a rubber spatula to fold together gently until no streaks of flour remain. A few small lumps are fine. Do not overmix.
  7. Fold in the toasted walnuts with just a few strokes. Reserve a small handful to sprinkle on top if desired.
  8. Pour the batter into the prepared pan and spread evenly. If using, sprinkle reserved walnuts on top and gently press them into the batter.
  9. Bake for 55-65 minutes, until the top is deep golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. If the top browns too quickly after 45 minutes, tent loosely with aluminum foil.
  10. Let the bread cool in the pan for 10 minutes. Use the parchment handles to lift it out and transfer to a wire rack. Cool completely before slicing.
