A tender and juicy chicken breast stuffed with fresh mozzarella, basil, and tomatoes, finished with a homemade balsamic glaze for a fresh and sophisticated twist on comfort food.

  • 4 boneless, skinless chicken breasts (about 6 oz or 170 g each), pounded to even thickness
  • 8 oz fresh mozzarella, sliced (preferably whole milk mozzarella)
  • 2 medium ripe Roma tomatoes, thinly sliced (or cherry tomatoes halved)
  • About 12 large fresh basil leaves, washed and patted dry
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil, plus more for drizzling
  • ½ cup (4 fl oz or 120 ml) balsamic vinegar
  • 1 tablespoon honey
  • Salt and freshly ground black pepper, to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Place each chicken breast between two sheets of plastic wrap. Use a meat mallet or rolling pin to pound it evenly to about ½ inch (1.25 cm) thickness.
  2. Season both sides of the pounded chicken breasts with salt, pepper, and red pepper flakes if using. Set aside.
  3. In a small saucepan, combine balsamic vinegar and honey. Bring to a simmer over medium heat, stirring occasionally. Reduce for 10-12 minutes until thick and syrupy. Remove from heat and let cool slightly.
  4. Lay one chicken breast flat. Layer 2 slices of mozzarella, a few slices of tomato, a couple of basil leaves, and a sprinkle of minced garlic in the center. Fold or roll the chicken tightly, securing with toothpicks if needed. Repeat with remaining breasts.
  5. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear stuffed chicken breasts for 3-4 minutes per side until golden brown.
  6. Transfer skillet to a preheated 375°F (190°C) oven. Bake for 15-20 minutes or until chicken reaches an internal temperature of 165°F (74°C) and cheese is melted.
  7. Remove toothpicks if used. Let chicken rest for 5 minutes. Drizzle balsamic glaze generously over the chicken before serving.

Notes

Pound chicken breasts evenly for tender results. Sear chicken before baking to lock in moisture and create a golden crust. Reduce balsamic glaze slowly to avoid burning. Remove toothpicks before serving. Rest chicken after baking to keep juices inside. If skillet is not oven-safe, transfer chicken to baking dish before baking. Reheat leftovers gently to preserve texture and cheese melt.
