  • 1 teaspoon white vinegar
  • 8 ounces (226 g) cream cheese, softened
  • ½ cup (113 g) unsalted butter, softened
  • 2 cups (240 g) powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, sift together flour, cocoa powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat softened butter and granulated sugar with an electric mixer until light and fluffy, about 2-3 minutes.
  4. Beat in egg and vanilla extract until combined.
  5. Alternately add dry ingredients and buttermilk to the butter mixture, beginning and ending with dry ingredients. Mix gently just until combined.
  6. Stir in red gel food coloring and white vinegar.
  7. Drop rounded tablespoons of batter about 2 inches apart on prepared baking sheets, making about 20-24 rounds.

  10. Beat cream cheese and softened butter on medium speed until smooth and creamy, about 2-3 minutes.
  11. Gradually add sifted powdered sugar, vanilla extract, and pinch of salt. Beat until fluffy.
  12. Spread or pipe about 2 tablespoons of filling onto the bottom side of one cake. Top with another cake and press gently to spread filling evenly.
  13. Chill assembled whoopie pies in the fridge for at least 30 minutes before serving.
